Shrimp Tempura Recipe

Ingredients
Batter Mix
Cooking or Vegetable oil, for frying
- 12 pcs large shrimp, peeled with tails on
- 1 cup all-purpose flour, sifted and divided
- 1 cup cold water
- 1 egg
Tempura Sauce:
- 1 cup water
- 1/4 cup soy sauce
- 1/4 cup sweet rice wine
- 1 tablespoon seafood stock
How To Cook
- Combine flour, water, egg (save some flour for dusting the shrimp) in a medium bowl. Whisk lightly until mixture are combined. The batter will be slightly lumpy, dont worry it’s ok.
- In a shallow dish, pour remaining flour. Dredge shrimp in flour and then dip into the batter.
- Pour cooking oil in a deep-fryer with a depth of 4 inches. Heat over medium heat about 350 degrees F. Test the oil by putting a pea-size drop of batter on it. It should float but does not swell.
- Fry in batches for 2 to 3 minutes per batch, turning to brown on all sides.
- Remove from oil and drain on a cooling rack over a baking sheet.
- Serve hot with tempura sauce.
Tempura Sauce:
- Combine water, soy sauce, sweet rice wine, and seafood stock in a small saucepan.
- Bring to a boil over medium-high heat.
- Reduce the heat to medium-low and simmer for 10 to 15 minutes, stirring frequently.
