As you probably know, in addition to wheat adding excess carbohydrates to your diet, it can also cause serious problems for your health. Even if you’re among those that don’t suffer from Celiac disease, gluten and the many other proteins in wheat can disrupt your digestive comfort and overall health.
One of these proteins, known as gliadin, can cause the lining of your gut to become more permeable. This “leaky gut” can lead to inflammation and immune reactions throughout your body and trigger issues like arthritis, Alzheimer’s, eczema and a host of other symptoms.
When we adopt a keto lifestyle, we’re spoiled with all the delicious, healthy fats that we were told for so long were harmful. We learn how to make healthy choices that decrease carbohydrate intake without lowering our snacking satisfaction. However, there’s little that can replace that slice of toast in the morning. Lettuce wraps and cauliflower “bread” certainly don’t do the trick.
We wanted to create an ultra low-carb, keto-approved bread that truly hits the spot, so we turned to our most versatile all-purpose paleo baking blend, Miracle Mix.
Making Keto Breakfast Bread with Miracle Mix
Not only is this bread absolutely delicious, it’s also quick and easy to make. And fool-proof too!
Because Miracle Mix has the perfect ratio of almond to coconut flour, there’s no crossing your fingers and hoping it works. This mix is guaranteed to give you the best gluten-free toast your butter has ever seen! And it holds together like traditional bread, so it’s the perfect complement to dip in sunny yolks or to pile your eggs on top for an open-faced breakfast sandwich.
Paying homage to the nutty breakfast breads of the past, we amplified this loaf with some sunflower and sesame seeds. Sunflower seeds are loaded with vitamin E and magnesium, so your morning meal gets an extra nutrient boost. And the nutty crunch of sesame seeds on top is reminiscent of those bagel mornings. However, instead of the mid-morning crash you might expect from doughy bagel, this bread will fuels you up for whatever comes your way.
So, let’s get to baking!

Ingredients
  • ½ cup Miracle Mix
  • 3 pastured eggs
  • 5 Tbsp. melted butter, coconut oil, lard or tallow
  • 1 tsp. gelatin
  • ¼ cup raw sunflower seeds
  • 2 tsp. sesame seeds
Instructions
  1. Preheat your oven to 350 F. Butter a 7.5 in by 3.5 in Magic Loaf pan and set aside.
  2. Whisk 3 eggs and 5 Tbsp. melted butter in a large bowl.
  3. Add in ½ cup of Miracle Mix and 1 teaspoon gelatin (this helps reduce breakage and maintain moisture). Whisk to combine.
  4. Stir in ¼ cup of sunflower seeds.
  5. Scrape the batter into the greased pan and gently tap on the counter to ensure it is evenly distributed.
  6. Sprinkle 2 teaspoons of sesame seeds evenly across the top and transfer to the oven.
  7. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Use a butter knife to release the bread from the pan.
  9. Place on the wire rack to continue cooling.
  10. Store refrigerated in an airtight container for up to 5 days.
