MEDITERRANEAN GRILLED ZUCCHINI BOATS WITH TOMATO AND FETA
This delicious Mediterranean grilled zucchini boats come together in less than 15 minutes! Topped with chopped tomatoes; feta cheese; and green onions, you’ll have grilled zucchini boats that are perfect for a side dish or an appetizer. ingredients
  • 3 zucchini (or zucchini and yellow squash), tops removed, sliced in halves length-wise
  • Slat and freshly ground pepper
  • 1/2 tsp garlic powder
  • Extra virgin olive oil
  • Juice of 1/2 lemon (about 1 tbsp lemon juice)
  • Zest of 1 whole lemon
  • 1/2 cup crumbled feta cheese
  • 3 pearl tomatoes chopped, drained in a colander
  • 1 green onion (both the white and greens), chopped
instructions
  1. Lightly oil the grate of an outdoor gas grill. Preheat the grill to medium-low.
  2. Season the zucchini with salt, freshly ground pepper and garlic powder. Drizzle generously with extra virgin olive oil. Work the zucchini in the olive oil so that all slices are well coated on both sides.
  3. Cook on the preheated grill until softened and nicely charred, about 3 to 4 minutes on each side.
  4. Remove the zucchini from the grill. Add a little more extra virgin olive oil, the lemon juie and lemon zest. Top with the feta, tomatoes and onions.
  5. Enjoy warm or at room temperature
