Paleo Korean Beef Bowls

Paleo Korean Beef Bowls
Haaaaaaappy Friday, y’all!
Umm. Can we talk about this week’s Real Housewives of New York?
What.
I mean, LuAnn is insane, right? What is happening there?! How does she not realize she’s insane?!
I’ve watched the episode 3 times and I still squeal with horrified glee when they all go crazy over the guys on the boat. So embarrassing. The whole episode was a mess.
And I loved every minute of it.
Also, Big Brother is really boring and this is the first time I haven’t cared about it since season 2. So. Ugh.
Way to ruin my life, CBS.
My friend Laura Fuentes released her newest book recently. It’s called The Best Grain-Free Family Meals on the Planet and if you are paleo, you need it.
As the title suggests, these are all grain-free meals that the whole family will love. Like, your kids aren’t going to look at the meals and know they’re grain-free and ask for a box of Kraft mac & cheese.
Most of the recipes are dairy-free, too, which is why I think it’s great for all you paleo people. There’s a handful of recipes with cheese but I’m okay with cheese every once in awhile so it’s not a huge deal for me. If you can’t do cheese, Laura has some suggestions for substitutions or you can just leave it out completely.
The book is gorgeous, has a ton of photos, and has a section featuring Laura’s tips and tricks for making a grain-free lifestyle work when you have little ones. It’s divided into 4 recipe sections: breakfasts, lunchbox favorites, family meals, and snacks and treats. So there’s something for every meal and everyone in your family.
I’ve already made these Korean Beef Bowls twice and I love them. The beef is spicy with just a hint of sweetness and the sesame oil just makes it extra delicious. It’s also really good on top of sweet potato noodles!
Other recipes from The Best Grain-Free Family Meals on the Planet that I’m excited to make:

Ingredients
  • 1/3 cup coconut aminos
  • 2 1/2 tablespoons honey
  • 2 tablespoons sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 bunch scallions, chopped, white and green parts separated
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili paste
  • 2 tablespoons cooking oil
  • 1 1/2 pounds ground beef
  • 1 tablespoon toasted sesame seeds
  • 3 - 4 cups cauliflower rice (this recipe but leave out the onion, lime, and cilantro)
  • 1 pound broccoli florets, steamed
Instructions
  1. In a small bowl, stir together the coconut aminos, honey, sesame oil, garlic, ginger, white scallion parts, pepper, and chili paste.
  2. In a large skillet set over medium-high heat, heat the cooking oil. Brown the meat for 5 to 8 minute, break it up with a spatula as it cooks. Continue cooking until the meat is no longer pink. Add the sauce to the skillet, bringing it to a quick boil, and then reduce the heat to low. Cover and simmer for about 4 minutes.
  3. Serve warm, sprinkle with the green scallion tops and sesame seeds over the cauliflower rice with steamed broccoli on the side.
