I recently discovered Silk Soy Nog and must say – it’s a delicious alternative to traditional eggnog! It’s made without eggs, dairy, or saturated fat, which means it can be more of a “guilt-free” treat. And it’s the perfect drink to serve at a party, especially in the age of so many food intolerances.

Glazed Eggnog Bread Recipe

Ingredients
  • 2 1/2 c. all-purpose flour
  • 1/2 c. granulated sugar
  • 1/2 c. packed brown sugar
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 3 Tbsp. vegetable oil
  • 1 1/4 c. Silk Soy Nog
  • 1 egg
  • 1/2 tsp. nutmeg
  • 1/4 tsp. rum extract
  • For Glaze:
  • 1 c. powdered sugar
  • 1 Tbsp. Silk Soy Nog
  • 1/8 tsp. nutmeg
Instructions
  1. Combine all ingredients in a large mixing bowl; stir or beat with a hand mixer until well combined.
  2. Pour into a greased loaf pan.
  3. Bake at 350 degrees 55-65 minutes or until center is set and top is golden brown.
  4. Remove from oven; cool 10-15 minutes in pan.
  5. Loosen sides of loaf from pan; remove and cool completely on a wire rack.
  6. Prepare glaze by combining all ingredients in a small bowl and mixing until smooth. (Add more nog to reach desired consistency.)
  7. Drizzle evenly over bread.
  8. *Glaze will harden at room temperature.
