VEGETABLE BAKE RECIPE

A creamy vegetable and rice bake. This is a great way to use up vegies before they go off.


This Vegetable Bake is one of the comfort and healthy food , try this recipe for your kids who doesn;t like any kind of vegetable, i am pretty sure they will be love this menu !!

INGREDIENTS :
  • 2 carrots diced
  • 1 zucchini diced
  • 1 potato diced
  • 1/2 cup pumpkin diced
  • 1 onion diced
  • 1 sweet potato diced
  • 3 squash quartered
  • 150 ml cream
  • 2 tbs butter
  • 1 cup cheese shredded
  • 1 cup water
  • 120 g rice
  • 1 tsp garlic minced
INSTRUCTIONS :
  1. Preheat oven to 180C.
  2. Add all vegetables to a baking dish.
  3. Add cream, butter, water and rice to the baking dish, and mix well.
  4. Cook for 30 to 45 minutes. Sprinkle cheese over the top and cook for a further 10 minutes, or until golden brown.
  5. Stand for approximately 10 minutes to slightly cool and allow liquid to thicken.
NOTES
  • If a few more vegies are needed, add peas and corn from the freezer.
  • Add or take out what suits your family.
  • This is great on first night but even better on the second night.
